In this video, Kaitlin and Savanah show you how to create vegan coconut milk ice cream from scratch, with the option of adding it to champagne to create a bubbly, tasty, health(ier) cocktail for anyone to enjoy. This tropical mixture is an ideal beverage for a fun brunch get together, a girls weekend getaway, or for sipping by the pool on a sunny summer day.

Whether you choose to eat the ice cream alone or turn it into a fancy cocktail is up to you. Either way, you can be sure that it’s healthier than downing a pint of regular ice cream, and will keep you feeling great and looking slim in your swimsuit (as long as you don’t have too many…)

Here’s what you need to steal this recipe:
Pina Colada Float Ingredients:
- 1 Cup Coconut Milk (leave layer of cream on top)
- 1 Cup Chopped Pineapple
- 1/4 Cup Sugar
- 1 Bottle of Champagne (optional)
- Shredded Coconut for Garnish (optional)
How to Prepare it:
First, you’re going to turn your stove onto medium-high heat.
Then you’re going to put your sliced pineapple into a medium saucepan.
Next, you’re going to add the sugar and mix it up.
You’re going to want to cook that down until it looks like a compote. Once it starts bubbling, reduce the heat and let the mixture simmer for about 10-15 minutes.
Then, in a separate mixing bowl, you’re going to measure out about a cup of coconut milk with the cream layer on top.
Add the warm pineapple compote to the coconut milk and mix it up well.
Once combined, you’re going to take the entire bowl and put it in the freezer. Take the bowl out and mix it every 10-15 minutes until the mixture has completely frozen.
Once your ice cream is frozen and ready to go, you can enjoy it as is… But, if you want to have a little fun. take a scoop and add it to the bottom of a wine glass and top with either champagne, cider or juice.
For the ultimate cocktail experience, add a fun garnish like shredded or grated coconut, and a pineapple slice. (You’ll want to wet the rim of the glass and dip it into the coconut before adding the ice cream and champagne, otherwise, it won’t stick very well).
